I’m a big fan of prepping food, something about it is therapeutic. Not only is it therapeutic, but it’s great when your in a hurry too. With two boys, it’s hard to take the time to make a meal. I usually struggle with lunch, it seems like our days go by so quickly – so many needs, so many different responsibilities- lunch is one meal I don’t seem to be able to take the time for, unless of course I prep ahead. Chicken salad is one of my ALL TIME favorites. I love the taste, but I also love that you can prep ahead, and store it for a few days.
Chicken Salad Recipe
• 1 whole/rotisserie chicken (cooked)
• 2 green apples diced
• handful of grapes
• cranberries
• squeeze a little lemon juice
• 1 cup mayo
• 1/4 cup brown sugar
• 1 teaspoon honey dijon mustard
• salt + pepper
I like to serve with pita chips, or crackers
I also love to make sandwiches on Artisan bread
