Leftovers, or no? I hate wasting food, so if there’s a way to eat it as a leftover – we always try to do that. I made salads the other night, and I made quite a bit of chicken. Obviously, we didn’t eat it all- so I decided to work with what I had. This recipe is one that I kind of threw together by what I had on hand, and it turned out to be pretty darn good.
For this it’s just what it says, with a good sauce concoction – and a slow cook! I took the leftover thighs, red potatoes, and carrots- tossed them in with a sauce (ketchup, soy sauce, syrup, red pepper flakes, oregano, and garlic powder), and a little vegetable oil- cooked slowly for about 5 hours. I decided to toss this on a sheet pan, and broil for about 8-10 min!
