Mexican food just hits the spot, and I love to switch it up once in awhile. There’s nothing like tacos, but I thought it would be fun to make it casserole style. The nice thing about this recipe is that you can tweak it as fits best for your family. My husband doesn’t like black beans, so for this I left those out (I love them & next time I may have to sneak them in).
You can make this recipe ahead, or tweak it to your liking.
Ingredients
2 lb burger
1 onion
Tortilla Chips
Rotel
Corn
Cheese
Green Onions
This is what I did:
Brown 2 lb burger, toss in and sauté an onion and add taco seasoning in. Grab a casserole dish and start the layering process: tortilla chips (Doritos would be amazing too), meat, rotel (do not drain), and sweet corn. At the end I top with Monterey Jack/Colby cheese, and I’ll sprinkle more taco seasoning. I also like to cut up a lime and squeeze over top of the casserole to give it a little kick. I garnished with green onions. I served this with rice, but you could also add the rice into the casserole too. I also added sour cream to mine (not everyone likes that so I just put it on my plate).Next time I will add queso in, and maybe even a black beans or refried beans. Like I said, you can switch this up several ways- but this is what worked for us! I baked @350 for about 25 min.
