Hey there! Been awhile since I’ve taken/had the time to do a whole lot other than take care of my kiddos. Blake joined us on 11/9, and ended up in the hospital the following week with RSV. Needless to say, it’s been quite a rollercoaster over here, ha. Thankfully he’s doing great now, and thriving- so for that I am thankful. Right now I am all about quick + easy- and I’m trying to prepare for that healthy eating transition too (after the holidays, of course) For now, and since it’s Friday – I decided to make one of my faves: BBQ SLIDERS! You can do this with any kind of meat, I however prefer using a chuck or pork roast – I’ll cook it on high pressure in my instant pot – then shred the meat with my kitchen aid. Once you do that, the rest is a piece of cake- I mean the first part is too, but this parts the final step! I’ll lay out sweet Hawaiian rolls, put the shredded meat on them- add pickles or cheese if you want- then drizzle with bbq sauce. I’ll put the tops on the sandwich, and then drizzle a yummy mixture on top of them. This mixture seals the deal- and it’s easy too. You’ll want to melt butter, sprinkle in garlic powder, and brown sugar. Stir it up real good, then put on top the sandwiches. I’ll cover with foil, and bake @350 for about 15 min. AMAZING, and like I said- easy.
I like to serve this with coleslaw, and fries or chips!
