I love all things Irish- I would love to travel to Ireland- but for now, celebrating at home will do. This year I decided to try making a Shepherds Pie, Reuben Dip, and a sensory bin for the boys.
I wasn’t sure how I’d like the Shepherds Pie, but I really enjoyed it. The sensory bin was a lot of fun for the boys, and the dip was just like a Reuben sandwich- but dip style.
Beef or Lamb
Sauté: onion, carrots, and celery
Add Tomato Paste / teaspoon of red wine / 1 cup of beef broth
Add seasonings: Rosemary, Parsley, Salt, Pepper
Add peas last
Put the mixture in a casserole dish
Layer with mashed potatoes/cheddar cheese
Bake @350 for 25 min
