Sharing one of our favorite household soups – chicken tortilla soup!! This one hits the spot, especially if you love all things Mexican. It’s quite simple, and there are several ways to cook it- but I prefer the good ol instant pot.
Chicken (cooked) we prefer thighs. This time I tossed them in taco seasoning- and air fryed them before tossing into the soup mixture.
Sauté onions + 2 jalapeños
The rest is simple- just dump it all in & cook on high pressure for 35 min. You could also slow cook this as well. I like to make my own tortilla strips for this soup. I just take small tortillas, and slice them into strips with a pizza cutter. I toss them in: avocado oil, taco seasoning, salt, and pepper. You can bake these on a low temp (225) or air fry them!
